Is it possible to sanitize Cacao Nibs? I guess you could boil them or pasteurize them ... but I would think you would lose flavor and aroma by doing that.
Soak them in vodka maybe ... I guess that is what I did with Jalapeño.
I've never used them myself, but I remember asking at the LHBS and them telling me it would be unnecessary to sanitize them. Bummer.
This is the only thing out of the ordinary that I added to the beer so I assume that's where the infection came from. But I could be wrong. I also assumed I wouldn't have to sanitize them, that the alcohol in the fermented beer would kill the bugs.
